What is Sangak?

Sangak is a traditional Persian flatbread made from whole wheat flour. It is one of the oldest types of bread in Iran and is considered a staple food in the country. The name "sangak" comes from the Persian word "sang," which means stone, and refers to the traditional way of baking the bread on hot pebbles or on a hot stone surface. To make Sangak, you will need:

1. In a mixing bowl, combine the flour and salt. 2. In a separate bowl, dissolve the yeast in warm water and let it sit for 10 minutes until it becomes frothy. 3. Add the yeast mixture to the flour mixture and knead the dough for 10-15 minutes until it becomes smooth and elastic. 4. Cover the dough with a damp cloth and let it rise in a warm place for 2-3 hours until it doubles in size.

Baking the Bread

1. Preheat the oven to 500°F. 2. Divide the dough into 4-6 equal parts and shape them into oval or rectangular shapes. 3. Place the dough on a floured surface and use a rolling pin to flatten it to a thickness of about 1/4 inch. 4. Use a fork to poke holes all over the surface of the dough. 5. Sprinkle some flour on a clean kitchen towel and place the dough on top. 6. Cover the dough with another towel and let it rest for 20-30 minutes. 7. Heat a large baking stone or a cast-iron skillet in the oven for 10-15 minutes. 8. Carefully transfer the dough onto the hot stone or skillet and bake it for 8-10 minutes until the bread is golden brown and crispy on the edges. 9. Remove the bread from the oven and place it on a wire rack to cool.

Serving Suggestions

Sangak is often served with various stews such as ghormeh sabzi (herb stew), gheimeh (meat and split pea stew), or fesenjan (walnut and pomegranate stew). It is also delicious served with dips such as hummus, baba ghanoush, or mast-o-khiar (yogurt and cucumber dip). It can also be used as a base for pizza or topped with cheese and herbs for a simple snack.
